Flavorful turkey wings brined with orange and lemon, marinated in jerk seasoning, then smoked until tender and finished with a high heat crisp for a delicious Thanksgiving main or side.
Brine your turkey using all the ingredients listed under “Brine”. Add enough water to cover the Turkey wings and allow to Brine for at least 30 mins.
Now rinse the Brine off and add all the remainder of ingredients and combine ensuring that the marinade gets under the skin, any openings and all over the wings. Cover and allow to marinate for at least 4hours-overnight.
Preheat your smoker to 275 degrees F and spray the grill grates to prevent sticking.
Add the wings to the grill once preheated and allow them to smoke for 2 hours. Turn them half way throughout the process to ensure even cooking. You can also baste the wings with any remainder of marinade throughout the cooking process for some extra flavor. Injecting the wings with some kind’ve flavored butter can also help to keep them juicy and add flavor.
After 2 hours adjust the temperature to 400 degrees F by turning your flames up. Cook for an additional 10-20 mins ensuring you flip the wings. This will help to crisp up the skin. Cook until the internal temp of the wings read 165 degrees F, when a food thermometer has been inserted into the thickets part of the meat.
Remove the wings from the grill and serve right away with your favorite sides or sauce. Enjoy!
